Baba Ganoush


Baba Ganoush is a middle eastern smoked aubergine dip. Not as weird as it sounds, actually tastes pretty amazing! It's usually eaten like hummus with flatbread, but you can really incorporate it into a million dishes (just like hummus). I think traditionally it's one with a good portion of yoghurt to make it even premier, but it tastes just as amazing without, you can really taste the smoked aubergine even more. It's also a pretty easy recipe that you can prepare while cooking your mains especially if you have friends coming over! 

Makes 1 medium bowl: 

1 large aubergine (2 medium  ones)
2 tablespoons tahini
2 cloves garlic
1-2 tablespoons oil
1/2 lemon juice

Preheat the oven to 200C. 
Poke holes with a fork into the aubergine and place the whole aubergine on a tray into the oven. 
Bake for around 40-45 minutes.
Once they've finished baking and you can poke a fork though and make it go all the way you can pull them out of the oven and let cool for 5/10 minutes. 
Then cut the aubergine in half and just scoop out the flesh and place into a food process along with the garlic, oil, lemon, tahini and salt.
Let the processor work it's magic until you have the right creamy consistency and it's ready to serve!
