Honey Cinnamon Granola


I never thought it was this easy to make granola and I really won't be buying it from the store anymore as nothing beats knowing that there is nothing refined and no preservatives in it. I find that often when you look for products in the store without refined sugar, gluten, ingredients with crazy names you don't even know what they mean and without preservatives they for some reason seem to cost more, even though there is less in them if they are raw. So I was kind of fed up and decided to make my own and I was surprised by how easy it was. Follow the below instructions an you'll have amazing healthy granola in no time. Oh, and apologies in advance for the ongoing honey-cinnamon obsession. 

2 cups of oats
50gr cup of almonds
100gr pumpkin seeds
100gr sunflower seeds
3 tablespoons of coconut oil
3 tablespoons cinnamon
3 tablespoons organic honey

Preheat the oven to 180C.
Place the almonds in a food processor and pulse quickly in order to get chunky bits of almonds, not flour. If you don't have a food processor you can also chop the almonds into chunky bits it will take a little longer, but it will work as well! Then add the chopped almonds into a mixing bowl with the pumpkin seeds, sunflower seeds and oats. 
Place the coconut oil, honey and cinnamon into a saucepan and heat until it mixes into an amazing smelling liquid. 
Add the sweet liquid into the bowl of dry ingredients and still well until the whole mixture becomes sticky and cover by the liquid. It won't be as liquid as you thought it would be but that's ok. 
Then line a baking tray and spread the whole mixture across it evenly and place into the oven. 
Cook for about 35 minutes, it is very important that you mix the granola every 10 mins or so otherwise it will burn. 
Once the granola  is golden, take it out of the oven and let it cool before storing it into an airtight container!
