Raspberry Ginger Energy Balls


I've been travelling a lot lately and making my own little snacks has been a lifesaver, as you might know airport/airplane food is basically the worst. Although I have to admit that in the UK Pret A Manger has been pretty good as they have been serving some nice veggie salads and acai bowls (I KNOW!). But energy balls are just an amazing on-the-go pick me up that keep you going though really long days and journeys. I've recently tried this fruitier variation of these Ginger Cinnamon Energy Balls you guys have loved. Their raspberry favour with a spicy twist makes them more summer appropriate for summer! 

200gr medjool dates
200gr cashews
50gr oats
2 teaspoons ginger
3 tablespoons freeze dried raspberries
tablespoons melted coconut oil

Place the cashews in a food processor and pulse until they are quite thinly crushed, but not yet flour. Melt the coconut oil in a saucepan on low heat. Remove the pits from the dates and add the rest of the ingredients, including the oil to the processor and mix well until nicely even. Take out about a tablespoon of the mixture and roll into a ball. Place the crushed freeze dried raspberries into a bowl and roll each ball in it until covered. Once you have finished rolling up the entire mixture place the energy balls into the freezer for an hour which makes them harden. Afterwards they can be stored in the fridge.

*medjool dates are much softer and juicier than normal dates so they just make the world of difference in this recipe. However if you use normal dates make sure to soak them in water before processing them.
