Broccoli Quinoa with Turmeric Tahini Dressing


This is such a healing and warming bowl which makes it the ultimate winter lunch. Spring might be coming, but it's still pretty cold outside and I don't know about you but I need a few energising meals to get me through this last freeze! It's really easy to make to, see for yourself. 

serves one
90gr quinoa
60gr broccoli (1/2 broccoli)
1 tablespoon tamari or juice of 1/2 lemon

for the dressing:
olive oil
1 heaped tablespoon tahini
1/2 lemon juice
1/2 teaspoon turmeric
salt and pepper

Place the quinoa in a bowl with water and leave to soak for 10-15 min
Bring about a mug of water to a boil in a pan.
Rinse the quinoa well in a sieve under water and place it into the pan with the boiling water. Add tamari or or lemon juice. 
Let the quinoa boil for a minute and then lower the heat, cover with lid  and leave to simmer for about 15 minutes until the water has completely evaporated and the quinoa is fluffy but neither mushy or crunchy. 

While the quinoa cooks place the broccoli florets into a pot of boiling water and cook for a couple of minutes until you can pierce a fork through them. Then drain.

Now prepare the dressing. Place all ingredients in a bowl and mix until even and creamy.

Once both the quinoa and broccoli are cooked place them on a plate and pour dressing over it! Enjoy and let me know what you think!
