I've been holding on to this recipe since last august and I know I only just posted a recipe for Energy Balls last week, but I can't hold these in any longer. They are so so so delicious!!!! They taste like Rice Crispy treats but with a nutritional twist! You can buy puffed quinoa in health shops or on Amazon or make it yourself. If you can't find it just use puffed brown rice!
100gr puffed quinoa (or rice)
50gr sunflower seeds
50gr goji berries
1/2 cups peanut butter
2 tablespoons honey/agave syrup
1 tablespoon cocoa powder
Heat up peanut butter, cocoa and honey/agave syrup in a saucepan on low heat until it becomes a little runnier. Place the rest of the ingredients in a mixing bowl, pour the peanut butter mixture over it ad mix well. Form little bite-sized balls and place in the freezer for about an hour until they become firm. Store in the fridge!
