I can't believe it's taken me this look to upload these, as they were probably one of the first things I shot for the blog! With no further ado, here's an easy recipe for classic cacao, almond and chia energy balls! They are the gooiest little bites ever thanks to the dates and almond butter, so rich in flavour thanks to the cacao. You have to be super disciplined not to eat them all with the day of making!!
If you keep them in an air-tight container you can store them in the fridge for up to a week, otherwise you can keep them in the freezer.
Makes about 15 balls (depending on preferred size)
200 gr medjool dates*
2 tablespoons coconut oil
2 tablespoons cacao powder
1 tablespoon almond butter
1 tablespoon chia seeds
sesame seeds or shredded coconut to cover (optional)
Place the almonds in a food processor and pulse until they are quite crushed, but not yet flour. Melt the coconut oil in a saucepan on low heat. Than add the rest of the ingredients, including the oil to the processor and mix well until nicely even. Take out about a tablespoon of the mixture and roll into a ball. If you are coating them with shredded coconut or sesame seeds do so before placing them into a container. Once you have finished rolling up the entire mixture place the energy balls into the freezer for an hour which makes them harden. Afterwords they can be stored in the fridge.
*medjool dates are much softer and juicier than normal dates so they just make the world of difference in this recipe. However if you use normal dates make sure to soak them in water before processing them.
