I remember I used to buy packs of mixed vegetable chips and always pick out the “red ones”, when I found out what they were I was kind of shocked as I didn’t expect them to be beetroot!!! Vegetable crisps are really easy to make and super delicious, so I thought I'd give my favorite flavour a try. I make them in the oven so we don’t need to deep fry anything!
Makes a medium bowl of chips (more than the image):
3 medium Beets
2 tbsp olive oil
salt and pepper
Preheat the oven to 200C.
Rinse & scrub the beet and slice it VERY thinly. The thinner the better! You can either use a very sharp knife or the side with the long blades on the cheese grater.
Line a baking tray and spread the olive oil evenly across it. Place the sliced beetroot pieces on the tray and sprinkle with salt and pepper. Bake for about 15/20 mins until they are slightly brown and curl up looking crispy. Watch them very carefully as they are very quick to burn!
Once they are down pull them out of the oven and let them cool, this is important because this is when they become hard and crispy!
