I told you there was some awesome Halloween recipes coming your way! Here's number one: these cookies are literally my favourite thing ever right now. They taste kind of like gingerbread cookies because they have a delicious ginger and cinnamon twist! They're also really easy to do, it will only take you max. 20 mins until you take them out of the oven!
5 big juicy Medjool Dates
3 tbs coconut oil
100gr buckwheat flour
2 tbsp maple syrup
1 tbs nut (cashew, almond) butter
1 cacao powder
1 tbsp grated ginger
1 tbsp cinnamon
Preheat the oven to 180C.
Heat up the coconut oil, maple syrup, nut butter, cacao, ginger, cinnamon in a saucepan until everything melts together.
Throw the sauce, dates and the flour in a mixer and blend until a smooth dough is formed. If you have a lot of (smooth) separate pieces in your blender, just take them all out and roll into a ball with your hands.
Roll it out and stamp with whatever shape you like, because it's Halloween week at JCHQ, we've made them into little bats!
Lay them out on a backing tray and bake them for about 10 minutes.
Leave to cool completely and this is really important because that's when they harden.
